Salmon w/ a Bourbon Maple Glaze over Fried Polenta Cakes

This is a great summer dish that is fun, rich, sweet and savory and will pair well with a low rye bourbon or light red wine.  Buon Appetito!

Salmon w/ a Bourbon Bacon Maple Glaze over Fried Polenta Cakes
Ingredients
3 1/2 cups of water
1/2 teaspoon kosher salt
1 cup dry plenta
3 tablespoons olive oil
4 (4-6 ounce) Salmon Fillets
1/4 teaspoon freshly ground black pepper
Maple Bacon Bourbon Glaze
1/2 cup chopped bacon
2/3 cup orange juice
1/3 cup pure maple syrup
2 tablespoon Bourbon
2 tablespoons brown sugar
1 tablespoon Dijon mustard
Polenta Cakes
Bring 3 1/2 cups water and 1/4 teaspoon salt to a boil in a saucepan.  Gradually add polenta, stirring constantly with a wisk.  Reduce heat to low; cook 12-14 minutes, stirring occasionally.
Once cooked; let cool in refrigerator
Form into small patties
Add 3 teaspoons of olive oil to pan and heat.  Add polenta patties to pan and cook on each side for 3-4 minutes till crisp
Salmon
Heat a large nonstick pan over medium to high heat.  Add 1 teaspoon oil.  Sprinkle fish with salt and peopper.  Cook, skin side down for 7 to 9 minutes; turn over and cook for 1 minute.  Remove from pan
Glaze
Combine the ingredients in a small saucepan over medium heat, whisking to combine. Bring to a simmer and cook, stirring occasionally, until thickened and reduced by about one-third, about 10 minutes. Let cool.
Finish
Once everything is cooked.  Postion Polenta cake on a dish; place the Salmon on the polenta; drizzle the glaze over top of the salmon
